And, there are those flatbreads that you bought over on the counter. And, well, you might be feeling adventurous, and that’s how *this* happened.

But, let me back up a bit. One thing I’m asked about all the time is how to do menu planning (or more like leftover planning).
How do you use everything that you bought, when clearly, one recipe won’t use up everything in the box/package/bag/whatever.
Take for instance, the bag of flatbreads that I bought to make individual pizzas for company this weekend. Each person had one flatbread to eat, but I bought 2 for each person in case they were hungry.
So, I was left with a bunch of extra ones. Now, my husband would be happy to have the leftover flatbreads as regular pepperoni pizzas every night. But, me, well, let’s just say that he loves pizza more than I do.
And, I recently won a whole box full of California avocados. So, I’m joking right now that everything I make this week is going to have avocados on it.
These leftover items are where a little bit of creativity, a bit of luck, and an adventurous spirit in the kitchen help with some menu planning.
My first thought was to just put avocado on a pizza. Then, as I thought more about it, I realized that a Mexican Flatbread Pizza could be amazing. Spread the flatbread with some Easy Enchilada Sauce, throw on some Mexican toppings (and avocado!), and you’ve got yourself a Mexican Pizza.
And, let me tell you, these bad boys are awesome! I love the Easy Enchilada Sauce as the pizza sauce. It’s rich and thick, but with a Mexican twist!
The flatbreads can be homemade or store-bought. We’ve used Naan, pita, or ones just called Flatbreads. Boboli would also work well if you’re going the store-bought route. And, it makes are really quick dinner if you do go with some store-bought bread!
As with all pizzas, your choice of toppings can vary
Mexican toppings can include black beans, thinly sliced red onions, black olives, zucchini, whatever makes you happy. I’ve just given my suggestions as a tasty starting point.
I like the sweet corn with the savory Enchilada Sauce and the spicy Pepper Jack cheese, and all topped off with the creamy avocado.
You can buy jarred roasted peppers or roast your own. I have some instructions on how to roast your own here. I often buy a couple extra peppers during the week, roast them, and keep them in the fridge so that I can easily chop them and throw a little extra veggie into dinner.
Mexican Flatbread Pizza (Recipe card below)
- Flatbread
- Easy Enchilada Sauce
- Shredded Pepper Jack cheese
- Roasted red pepper
- Corn, defrosted if frozen
- Sliced Avocado
- Chopped Green Onions
Preheat oven to 450 degrees F. If you have a pizza stone, preheat the pizza stone in the oven.
Spread the flatbread with a nice smear of Enchilada Sauce.
Top with a handful of Pepper Jack cheese. Next, place your toppings on the cheese, not too many, or the pizza could get soggy.
Carefully place the flatbread pizza on the preheated pizza stone, or place the flatbread pizza on a cookie sheet and into the oven. Bake at 450 degrees for 7-9 minutes, or until the cheese has turned golden brown and is bubbly.
Carefully remove from the oven. Top with sliced avocado and green onions.
Slice as desired (these flatbreads I simply cut in half so we had two nice big pieces). Devour!

Mexican Flatbread Pizza
Ingredients
- Flatbread
- Easy Enchilada Sauce
- Shredded Pepper Jack cheese

OMG This looks so good! And simple! I want it for dinner! I can’t believe you won a bag of avocados -that is somehow almost as nice as winning the lottery to me lol. Your enchilada sauce is my go-to now and I never thought of putting it on a pizza like this. So delish! I’m never too creative with leftovers, or at least, not like this. I usually just make a kale salad, and make a smorgasbord ontop with all the leftovers -hummus, bean stew, avocado slices, brown rice or quinoa, etc. I feel like I’m at the Whole Foods salad bar, without paying $20 for my lunch 🙂
