With no processed sugars (refined sugar free), and naturally gluten-free, this smoothie is protein packed and full of flavor. It’ll change the way you think about mornings.

Another thing I like about this grab and go breakfast option, is that it combines your morning coffee and a great meal all in a hand-held cup. On the mornings you’re really tired, make this Vanilla Date Coffee Smoothie. When a healthy breakfast and your morning energy boost are combined, there’s one less thing on your to-do list.

Anytime you can get a smoothie to taste like a milkshake without packing in refined sugar, it’s a win. This thick, creamy morning pick-me-up uses a milk, yogurt, dates, and coffee to mimic your favorite date shake.

Instant coffee

If you have one of those little long skinny instant coffee packets you can use the whole thing of that rather than measuring out 1 teaspoon of it. They’re typically around 3.3 grams, which is more than 1 teaspoon. Which simply means these more coffee flavor in your smoothie than if you measure out 1 teaspoon. But, as far as I’m concerned more coffee is always a good thing.

I’ve also made this smoothie without the coffee. Sometimes you just want a healthy caffeine free treat. And that’s ok too.

Make it vegan

You can easily make this Vanilla Date Coffee Smoothie vegan by using plant-based milk. I think vanilla almond milk or coconut milk would be especially delicious. And, use plant-based yogurt. Vanilla flavor would be my choice here as well; I’ve also seen coffee flavored vegan yogurt, which would work.

Other fun ad-ins

Try mixing it up. Toss in some fun yummies each day to get different flavors.

  • Add in a tablespoon of nut butter
  • Toss in a small handful of chocolate covered espresso beans
  • vanilla or chocolate protein powder
  • shredded coconut
  • some cocoa powder for a mocha
  • Add in a little peppermint extract for a holiday treat
  • Toss in a little chia seeds

Time saver tip

Save some time in the morning, combine all the ingredients in a sealed container the night before and store it in the fridge. In the morning, toss it all in the blender, and breakfast is ready.

I like to serve my smoothies in a fun glass to help perk me up in the morning. Of course, a to go glass would also be perfect for a busy day.

Ingredients
  

  • 1 cup nonfat milk
  • 1 cup packed pitted Medjool dates (about 9 ounces)
  • ½ teaspoon vanilla extract
  • 1 teaspoon instant coffee granules
  • 1 cup nonfat yogurt
  • 2 cups ice cubes

Instructions
 

  • Puree milk, dates, and vanilla in blender until smooth. Add yogurt and ice cubes; puree until mixture is thick and smooth. Divide between 2 glasses and serve.
