Homemade Creamer
After I made my cup of coffee I poured in this delicious Coconut Milk Coffee Creamer, and couldn’t get enough of it! Honestly, I ate more than one spoonful of the creamer straight from the jar! It was that good!
I like this creamer because it isn’t as sweet as many of the store-bought versions. Even lots of the homemade ones are like adding dessert to your morning coffee. This is nicely balanced.
Low sugar
I used to only drink coffee with lots of sugar and creamer. Or, those sugary latte drinks from the coffee shop.
I decided that I wanted to give up all those extra calories and sugar. So, I started putting less sugar in my coffee.
Then, I actually went to a bigger mug and continued with the same amount of sugar (which meant less sugar in each sip).
Then, I finally went cream only. That was easy to reduce the amount of cream daily.
This Homemade creamer is another way that I reduced my sugar and cream intake. It made my morning coffee creamy and nice without all that added junk.

Personal Coffee Maker
I tried out this awesome (affiliate link) Personal Coffee Maker. I thought I’d share this little coffee maker along with this delicious recipe for Coconut Milk Coffee Creamer.
The Personal Coffee Maker would be great for a dorm room, or small apartment, as it takes up just a little bit of space.
It makes coffee in a flash! It only took about 3 minutes to make a full cup.

It would be great for anyone who’s in a hurry on a busy morning. Maybe you’ve got to drive the kids to school and there’s no coffee.

Coconut Milk Coffee Creamer Recipe
Coconut Milk Coffee Creamer
Ingredients
- ½ cup dates pits removed
- 1 can coconut milk 13.5 ounces
- ½ tablespoon vanilla
Instructions
- Add all ingredients to the bowl of a high-speed blender, and process until smooth, scraping down the sides of the blender, as necessary. Pour the creamer through a fine mesh strainer to remove any little bits that remain. Store in a jar with a tight fitting lid in the fridge for up to a week. Creamer will thicken as it stands in the fridge.

I figured about 2 tablespoons per serving, so 16 servings, but that might vary depending on how much you put in your coffee
I love this coffee maker, perfect for travel. The creamer sounds so delicious, turning an ordinary cup of coffee into a warming, comforting drink.
This is likely to be as big a hit as your “sore throat” remedy! Love this!

Could you use dried pitted dates? It’s hard to find the fresh ones :-/
yes, they would work as well. Just try to make sure that they aren’t too hard. I’ve found that the hard ones don’t blend up very well. If all you can get is the hard ones, I might suggest soaking them in hot/boiling water or even hot coconut milk for about 10 minutes to soften them. I’ve soaked them in OJ before and they come out great. But I don’t think OJ would taste good in coffee. ha!
About how many dates = a half cup? I used 6, but didn’t think it was sweet enough when added to the coffee–the actual creamer itself is delish!
Jen, it depends on how big the dates are to make 1/2 cup. The ones in the picture are kinda small, and I usually buy larger ones. I found it easiest to take the pits out and put them in the 1/2 cup measuring cup. Also, I tend to like things not quite as sweet as some people, so you may want more than 1/2 cup worth. Play around with it to find what you like the best. I’m glad you loved the creamer! Thanks for the comment.
I just made this creamer and it turned out really thick (not pourable) is that normal?
Michelle, no that seems odd to me. Some things I can think of, the coconut milk had separated (like if it was in the fridge it’ll separate into coconut cream and coconut water). Maybe the can was actually coconut cream, which would be really thick. It does tend to thicken as it stands. I guess I’d just add some coconut milk from a carton until it’s the thickness you like. You could add water as well, but that would make it less flavorful. Or, simply eat it with a spoon and call it pudding! ๐
Do you use full fat can coconut milk or light in can?
Carol, I prefer full fat canned coconut milk. Make sure to shake it really well before using it. You can, however, use either, whichever you prefer.
