Easy to make
These Parfaits are fun to make and they start out on the grill.
Simply brush the fresh pineapple with Lime Syrup, and place on the hot grill.
Flip the pineapple so that all sides are nice and caramelized.
Make the lime cheesecake filling by mixing all ingredients together with a hand mixer or stand mixer.
Then, simply layer graham cracker crumbs, lime cheesecake filling, and chopped grilled pineapple into the pretty glasses for presentation. Garnish with lime zest if desired.
Presentation tip
To make it easier and prettier to fill the glasses, place the cheesecake filling in a large zip top bag.
Cut the tip off of the bottom corner of the bag, and squeeze the filling into the glasses.
You can also use a pastry bag and tips if you want.
This makes it easier to avoid getting filling on the sides of the glasses.

Key Lime and Grilled Pineapple Parfaits Recipe
Key Lime and Grilled Pineapple Parfaits
Ingredients
Grilled Pineapple:
- Torani lime syrup for brushing
- Fresh pineapple sliced into long strips
Cheesecake filling:
- 16 ounces cream cheese softened
- ¼ cup lime juice about 2 limes
- ½ cup Torani lime syrup
- 14 ounce can sweetened condensed milk
- ½ Teaspoon Vanilla Extract
Parfaits:
- graham cracker crumbs
- lime zest
Instructions
- Grilled pineapple:
- Preheat grill so it’s nice and hot.
- Brush the sliced pineapple with Torani lime syrup on all sides, and place pineapple onto the hot grill. Grill until nice caramelization and grill marks start, and flip to grill all sides.
- Remove grilled pineapple from the grill, and cool a bit so you can chop into small bite sized pieces.
- Make the cheesecake filling:
- Place softened cream cheese in a large bowl, and with a hand mixer or stand mixer, blend cream cheese so it starts to get fluffy. Add lime juice, Torani lime syrup, sweetened condensed milk, and vanilla extract. Continue to blend until well combined, and soft and fluffy.
- Layer 2-3 tablespoons graham cracker crumbs into the bottom of the serving glasses. Top with lime cheesecake filling.
