The Complete Summer Cookbook
A hot day and hanging over your stove were never meant to be! That’s where {affiliate link} The Complete Summer Cookbook by America’s Test Kitchen comes in!
It stays hot where I live long into the fall, so this cookbook will serve me well for many months out of the year.
When fresh produce beckons but you haven’t much energy to respond, these recipes help you settle into a more relaxed kind of cooking designed to keep you and your kitchen cool.
Summer was meant for being outside.
You’ll find all you need for casual patio meals prepared entirely on the grill (from meat to veggies, even pizza). Throw a fantastic cookout with easy starters, frosty drinks, and picnic must-haves.
I’ll also be making the Creamy Corn Bucatini with Ricotta and Basil, and the Zucchini with Mint Salsa Verde, and the Lemon Icebox Pie.
I’m also going through a kitchen remodel right now, and have found that these types of no cook recipes are perfect for making in a torn apart kitchen!
When to serve these salmon rolls
Smoked salmon roll ups look and sound elegant and fancy! They’re also very simple to make. And since they can be made ahead, are easy on the host for a party.
This gorgeous smoked salmon appetizer will impress your friends and guests at a special brunch. You could serve them with bagel slices or little toasts as well.
These salmon rolls are a great lunch. Serve them over a bed or fresh greens like spinach or romaine with some arugula for an easy Salmon Salad.
These are a beautiful gluten free appetizer for a fancy cocktail party, garden party, or patio soiree spread.
They would even be welcome on a tailgating football spread.
They’re so fun serving them standing up like this, but they also look beautiful tipped on their side and laid down so they look more like smoked salmon pinwheels.
Smoked salmon
If you want to read all about smoked salmon, check out my Smoked Salmon Pizza post & recipe.
For these rolls, you’ll want really thinly sliced cold smoked salmon.
Nova, Nova Scotia salmon, and lox are all generic terms for cold-smoked salmon, which is mostly what you find at the grocery store.
Lox, however, is not smoked. Gravlax, not to be confused with lox, is salmon that has been cured under pressure.
America’s Test kitchen’s favorite smoked salmon is Spence & Co. Traditional Scottish Style Smoked Salmon.
I find that the slices that I get at the store are about 1 ounce each. The packages are typically 4 ounces, and have about 4 to 4 & ½ slices in the. So, to get 9 slices, buy two of these packages. A little more or a little less salmon or filling will be fine.
How to make
Despite how fancy they look, these smoked salmon roll ups come together easily.
The full printable recipe ingredients and instructions are available in the recipe card at the bottom of the post. You can find important tips and tricks in the post.
First, grab all of your ingredients, and let the cream cheese come to room temperature.
Letting the cream cheese soften at room temperature before mixing the spread allows it to blend easily with the other ingredients.
Mix cream cheese, sour cream, lemon juice, salt, and pepper in bowl until uniform.
Stir in shallot, capers, and chives. Want to learn more about capers? Check out this informative article on the Benefits of Capers.
Spread the cream cheese mixture evenly, about 1 teaspoon per slice, over slices of salmon.
Roll salmon around cream cheese mixture. Transfer salmon rolls to airtight container and refrigerate for up to 4 hours.
When ready to serve, slice each salmon roll in half with sharp knife. Stand each roll on its cut end.
Once the rolls are assembled, garnish the top of each one with a single leaf of baby arugula; its peppery bite lend a welcome freshness.
Variations
These smoked salmon rolls are light, visually appealing, and an easy starter. They have a modest schmear of cream-cheese-and-sour-cream spread that holds the rolls together without weighing them down.
If you like more filling to salmon, double the filling recipe.
These pinwheels are easy to customize as well.
I think these would be delicious with avocado and cucumber inside like sushi.
Add a little kick to them with creamy sriracha sauce drizzle.
Choose a flavored cream cheese like garlic & herb or garden vegetable. Use a low fat cream cheese to save some calories. Even go with a dairy free cream cheese and diary free sour cream if you’re lactose intolerant.
Sprinkle on some Everything but the Bagel seasoning or fresh dill after plating the rolls. More chopped shallot sprinkled over the top is a pretty presentation too.
