How to make
Chunks of brie cheese are placed in mini pie crusts and topped with sweet fig jam. Then they’re baked to golden perfection and the brie gets warm, gooey, and melted.

What ingredients do I need?
Let’s talk about the simple ingredients. Note: there are affiliate links in this section.
Fig jam: Fig preserves are full-bodied and fruity with caramel tones. You can use homemade fig preserves. Or, go with easy store-bought ones. Most well-stocked grocery stores carry fig jam, often near the fancy cheeses and crackers. Dalmatia fig spread is always good quality. They have an original flavor as well as one with a bit of orange. Both are great! Bonne Maman and Stonewall Kitchen both have great fig spreads as well.
Brie cheese: Brie is a nice creamy mild flavored cheese, and it’s perfect in this appetizer recipe. Make sure not to grab triple cream brie. Triple cream will be too runny in this recipe.
Pie crust: You can make your own pie crust if you prefer. But, for convenience, just go with a store-bought crust. Thaw your crust if frozen. And bring your crust to room temperature so that it doesn’t crack when you unroll it.
Egg wash: Next up is the egg wash (pretty simple, right?!?). Simply mix an egg with a little water.
Let’s make these little tarts
If you have metal mini muffin tins, prepare them by spraying non-stick spray or rubbing butter inside.
I recommend silicon baking pans because there’s no need to grease a silicon pan for these pies. I have links a little lower for kitchen products a little lower if you need some recommendations.
Roll out the pie crust so that its flat, even, and about ¼ inch thick.
Using a 2 to 2 & ½ inch round cookie cutter, cut the bottom part of the mini pies. I like to cut out the first round, see how it fits in the mini muffin cup, and decide if I need a bigger or smaller round, or if it’s just right.
If you don’t have round cookie cutters, think about other round items you may have in your kitchen like the tops of glasses, the tops of measuring cups or measuring spoons, or maybe the tops of round funnels.
Press the pie crust rounds into the baking tins and repeat until you have used about 2/3 of the crust. It should make about 21 to 24 mini pies, but some of that will depend on how many ounces your pie crust is.
Spoon a teaspoon full of fig jam into the pie crusts.
Trim brie by cutting off most of the rind. Cut brie into inch-cubes and insert them into the pies, pressing the fig jam down as you press in.
What is the white stuff around brie?
Brie is encased with a firm white rind on the outside. This edible white mold, called Penicillium candidum, blooms on the outside and is patted down, over and over again while the cheese forms, to create the rind.
Do I need to take the rind off before baking?
The rind is edible, however it’s slightly bitter and has a different texture than the creamy cheese inside. For most appetizers, I prefer to cut it off. But it is a personal preference.
Finish making the bites
Using a 1 to 1 & ½ inch round cookie cutter, cut out small rounds of pie crust until you have used all of the pie crust. You can reshape the scraps as well. Poke holes in the center top of the circles with a fork.
Place a small round crust on top of the pie and seal the rounds by pressing with a fork all around the diameter. You can also seal the edges by folding the top over the sides and pressing with your fingers.
Beat an egg and a tablespoon of water until well combined and brush the egg wash on top of the pies.
Bake for 15 to 18 minutes or until golden brown.
Let cool for about 5 minutes before taking them out of the pans.
Can I make this ahead?
This festive brie and fig jam recipe is a great recipe for busy holiday hosts because it can be made ahead of time.
Simply assemble the pies, and stash them in the refrigerator until just before guests arrive. Then bake them for about 20 minutes. Appetizer perfection in no time!
They can also be fully baked, popped in the fridge in an airtight container for up to 3 days, and reheated if you prefer.
For longer storage, these can be frozen. Place them on a baking sheet, in one layer so they aren’t touching. Pop them in the freezer, and once frozen, move them to freezer bags for up to 3 months. When you’re ready to use them, thaw them in the fridge overnight and then reheat in the oven.
For Reheating, either if made ahead or for leftovers: Place them in a 350° F oven for about 5 minutes.
Substitutions and variations
These are great simple little appetizers, but if you want to change them up, there are lots of things you can try. Here are some ideas to kick start it.
Add some nuts to the inside of the pies. Crisp pecans would be my first choice here. They would be so good! Candied pecans would also be lovely. Roasted walnuts or almonds would be great. You could also garnish them with some chopped nuts.
Toss in some fresh herbs. Rosemary, thyme, or parsley would add some nice color and freshness.
Garnish the tops of each pie with a little more fig jam. That will also help people to know what’s inside.
Want to try a different jam? Go for it! Strawberry, apricot, or blackberry would be delicious. Pop a small piece of the fruit inside the pie as well. Or try a nice pepper jelly for a spicy kick!
These will also work with puff pastry or those little puff pastry shells. You might need to adjust the baking time according to your package directions.
