Almond Cakes with Roasted Raspberry Swirl are moist and delicious little individual cakes baked up with a delicious sweet tart raspberry swirl.

These cakes are great for any dinner party or brunch, like Mother’s Day or Christmas.

Financier Cakes
These mini Almond Cakes are actually French cakes called Financiers.
Financiers are traditional small pastries with a light moist almond sponge cake texture.
The name, Financiers, is said to come from the fact that they look like French bars of gold.
Financier pan
To get this bars of gold shape, you’ll want to use a Financier pan like this one from Amazon.
This pan is something you can use over and over again.
Make little individual loaf cakes for Christmas gifts.
Just wrap them up in a pretty cloth, maybe even a dishtowel, and tie with a pretty ribbon, and you have a nice homemade gift to give friends and neighbors.
What if I don’t have a Financier pan?
If you don’t have one of these pans (and don’t want to buy one), but want to make these individual Almond Cakes with Roasted Raspberry Swirl, just fill muffin tins, or bake a larger loaf in a regular 9-inch x 5-inch (or thereabouts) pan.

Almond Cakes with Roasted Raspberry Swirl Recipe
Almond Cakes with Roasted Raspberry Swirl
Ingredients
Roasted Raspberry Swirl:
- 6 ounces fresh raspberries
- 1 tablespoon maple syrup
- ½ tablespoon olive oil
- pinch salt
Almond cakes:
- ¾ cup unsalted butter
- 2/3 cup all-purpose flour
- 1 2/3 cup powdered sugar
- 1 cup super fine almond flour
- 6 egg whites
- 1 teaspoon vanilla extract
- pinch salt
Instructions
Roasted Raspberry Swirl:
- Place a rack in the middle of the oven, and preheat to 350° F.
- Add the raspberries to a small oven proof baking dish, like a ramekin.
- In a separate small bowl, whisk together the maple syrup, olive oil, and salt. Pour syrup mixture over berries and very gently toss to coat.
- Roast for 20 minutes, or until the berry juices thicken and the raspberries start to fall apart, but not long enough for the juices to burn.
- While the raspberries bake, prepare the cakes.
Cake:
- Keep the oven at 350° F.
- Melt the butter in a small saucepan, and cook until it turns a pale golden brown color. Keep a close eye on the butter, as it can burn easily.
- Grease the bottoms and sides of the financier pan with some of the melted butter.
- Let the butter cool slightly as you work on the rest of the recipe.
- Sift the all-purpose flour and powdered sugar together into a large bowl and stir in the ground almonds.
- Place the egg whites in a separate large mixing bowl, and whisk by hand, with a hand mixer, or in a stand mixer, until they are white and frothy.
- Gently mix the frothy egg whites into the flour mixture. Stir in the melted butter and vanilla extract, and mix well.
- Spoon the batter into the cake pan, about ½-inch to 3/4 –inch high.
- Spoon about 1 teaspoon full of the roasted raspberries onto each of the cakes, and swirl it into the cake. You will not need all of the prepared raspberries for the cakes. Reserve the remaining sauce to serve on the side for dipping or spooning.
- Bake the cakes in the preheated oven for 20 minutes, or until they are lightly golden.
- Let the cakes cool in the pan for 5 minutes, and then remove them from the pan, and allow to cool completely on a wire rack.
- Serve the cakes warm or at room temperature with additional roasted raspberry sauce for dipping.

hello, can we use raspberry jam instead of roasted raspberries?
also does this cake gets hard the next day or do they stay soft. i was wondering if the flavor and texture is like madeleines? looks like them 🙂

Pearse, yes, you could use raspberry jam instead. It would be easier, for sure, but won’t taste quite as good. Also, it means your cakes will be sweeter, as jam will most likely have a lot of added sugar. These cakes stay nice and soft. Madeleines and Financiers are similar, yes. The main differences are that Financiers are made with egg whites and ground almonds, and more butter than Madeleines. Those ingredients will make a more nutty flavored richer cake. Madeleines tend to be good the day they are baked while these almond cakes will last more than a day. I hope you give them a try! You’ll love them!
