Bruschetta Authentico is a delicious and easy to make appetizer of Italian or French bread baked with Parmesan cheese, garlic and herb cheese spread, covered with fresh tomatoes, fresh basil, garlic, and drizzled with balsamic vinegar. It’s a great starter for any summer cookout or BBQ.
Oh, and if you have someone who doesn’t care for fresh tomatoes, I made a tomato free Bruschetta Authentico version as well.

Welcome to the first recipe in Tailgating Snacks Month for 2025! For those of you who’ve been with me for years, you know that this event moved from October to September in 2024. And we’re keeping it in September. 2025 marks the 12th annual Tailgating Snacks event! I can hardly believe it.

This Bruschetta Authentico is a copycat version of an appetizer dish I got at a local pizzeria. I was so impressed by it, that I knew I had to make it and share it with you! Check out my Instagram post about the restaurant.
Here’s their description: Italian Bread Baked with Two Cheeses, Herbed Goat Cheese, covered with fresh Roma Tomatoes, Fresh Basil, Roasted Garlic, Olive Oil, Oregano, Parmesan Cheese, Drizzled with Balsamic Reduction. Pretty straightforward and easy to make!

What is bruschetta?
But what is bruschetta, and is this an authentic version?
Authentic bruschetta is an Italian dish that features grilled or toasted bread rubbed with garlic and drizzled with olive oil. The word “bruschetta” comes from the Italian verb “bruscare,” meaning “to roast over coals”.
Well, this recipe is made in the oven, though you could roast it over the coals or a grill. And, for ease of making this, I don’t tell you to rub the bread with garlic, though you could. That just takes a bit of extra time. And, I know people who don’t believe that balsamic vinegar is authentic to Bruschetta, even though it’s so popular. Of course, you can leave the balsamic vinegar off if you prefer.
So, I leave it up to the maker, authentic or not, this appetizer recipe is delicious, and perfect for parties or just hanging around watching the game. I’ve also served it as a light lunch or dinner on hot days. And, like I said, it’s authentic to the restaurant.
How to make
Some of this recipe is not going to be exact, so you’re just going to have to have fun with it. Full ingredients and instructions are in the recipe card below. Be sure to scroll down.
Slice a loaf of Italian Bread or French Bread into ½ -inch-thick slices. You can also use sourdough bread. You just want something sturdy, hearty, and crusty.
A standard baguette will give you about 20 slices, but the exact number of slices can vary based on the thickness of the slices and the length of the baguette.

Arrange those slices in a single layer on baking sheets lined with parchment paper. Brush the top side of each slice with olive oil. Sprinkle each slice with a large pinch of Parmesan, about ½ to 1 tablespoon per slice.
Bake for 10 to 12 minutes, or until golden and toasted. This could also be cooked on a grill.

While the bread toasts, stir the tomatoes, basil, garlic, salt, and several grinds of pepper together in a large bowl.

Remove the bread from the oven, and spread about ½ tablespoon creamy cheese spread on each bread round. You can use your favorite brand of cream cheese spread from the store, or make a homemade garlic & herb cheese spread. You’ll want about 2/3 of a cup total from a container of about 6-8 ounces, but you may need more or less depending on how many slices of bread you have.

Use a slotted spoon to scoop the tomato mixture onto the cheesy bread pieces, leaving behind any excess juices in the bowl. Drizzle with balsamic vinegar if desired and sprinkle with flaky sea salt. Serve immediately.
Storage
Though this is best when served warm immediately after making, it actually holds up surprisingly well when stored in an airtight container in the fridge, up to a couple of days. Reheat in a preheated 400° F oven for about 5 minutes.
Tomato free version

Since I have someone in my house who doesn’t like tomatoes, I’m always trying to come up with tomato free versions of things. This is no exception. The red pepper version is just as good, if not better, than the original tomato version.
To make the tomato free Bruschetta Authentico version, simply replace the tomatoes with jarred roasted red peppers from a jar 12 to 16 ounces in size. Chop them into small pieces and follow all other directions in the recipe.

Bruschetta Authentico
Ingredients
- 1 baguette cut into ½ -inch-thick slices
- 2 tablespoons olive oil
- 1 ½ cups shredded Parmesan cheese
- 2 pounds ripe tomatoes diced
- ½ cup fresh basil leaves chiffonade
- 2 garlic cloves minced or pressed
- ½ teaspoon sea salt
- Freshly ground black pepper
- 2/3 cup Garlic and herb cheese spread (may need a little more or less depending on how many slices you get in the baguette)
- 1 teaspoon balsamic vinegar or more to taste
- Flaky sea salt for garnish
Instructions
- Preheat the oven to 400° F and line two baking sheets with parchment paper.
- Arrange the baguette slices in a single layer on the baking sheets and brush the top side of each slice with olive oil. Sprinkle each slice with a large pinch of Parmesan, about ½ to 1 tablespoon per slice.
