No flour cookies
In these times that flour is so difficult to find, these cookies may be the answer to your cookie cravings!
I decided I needed to use some of the 3 bags of almond meal in my freezer. Seriously, three bags! Who needs 3 bags?
Well, I have been known to want to make a recipe and not go to look to see what’s already in there. So, I end up with multiples of something. I’m not alone, am I?

Since flour is in short supply these days, I thought that a flourless cookie based on the almond meal was in order.
These simple cookies require just a small handful of ingredients. They’re crispy on the outside, and tender on the inside. You’re going to love them!
Where to store almond meal?
Did you notice that I said I store my almond meal in the freezer? That’s because nuts of any kind can go bad so quickly. The freezer extends the life of nuts so that I can use them for a long time!
I highly recommend storing any kind of nuts in the freezer.
What is Almond Meal?
Almond meal {affiliate link} is simply skinless, blanched almonds that have been finely ground.
You may see some recipes call for almond flour rather than almond meal. Almond flour is generally just almond meal that’s been ground even finer. So you may also see the label saying something like superfine almond meal.
And, if you only have almond flour in your kitchen, they may be used interchangeably at a 1:1 ratio. Almond flour will have a finer texture in these cookies, and will change the end result a tad. But they will still turn out great.
Almond meal is a great ingredient in baked goods as it lends a moist texture and rich buttery flavor to cakes, cookies, muffins, and quick breads.
You can also use almond meal to bread things like chicken, fish, and veggies for a gluten-free or low carb breading.
Aluminum free baking powder
If I can make a suggestion, please do yourself a favor and get aluminum free baking powder.
At first I didn’t think there was a difference between regular and aluminum free, but, I can totally taste the difference; the aluminum free baking powder tastes so much better to me!
Now, when I taste the regular stuff I can honestly taste the metallic flavor in it. And I find it to be so distracting in the food.

Coconut Almond Meal Cookies with Chocolate Chips
Ingredients
- 1 ¼ cups almond meal
- ½ cup shredded coconut
- ¼ cup chocolate chips
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 large egg
- 3 tablespoons unsalted butter
- 1/3 cup brown sugar
- ½ teaspoon vanilla extract
Instructions
- In a large mixing bowl, stir together almond meal, coconut, chocolate chips, baking powder, and salt.
- In a separate bowl, beat egg until uniform in color and doubled in volume. Set aside.
- Place butter in a small microwave safe dish, and melt in the microwave in 30-second increments, stirring after each time. Once butter is melted, stir the brown sugar into the butter until the sugar is dissolved. Stir the beaten egg and the vanilla into the butter and sugar mixture.
- Add the sugar mixture to the dry ingredients and mix until just combined.
- Chill the dough, covered with plastic wrap, in the fridge for at least 30 minutes and up to overnight.
- Preheat oven to 375° F.
- Using your hands, shape the dough into 1-inch balls, and place on baking sheet that’s been covered with parchment paper with 1-inch space in between each dough ball. Press down slightly to flatten a bit.
- Bake until edges begin to brown, 7-10 minutes.
- Remove from oven and let cool before serving. Cookies will be crispier at first, and will soften as they sit. Store cookies in an airtight container.
