Crispy Pizza Rolls

Easy to make, Baked Crispy Pizza Rolls have all the goodies you want in a pizza wrapped inside a crunchy egg roll wrapper, and baked to pizza perfection.

Skip the store bought, processed frozen pizza rolls, and make up a batch of Baked Homemade Pizza Rolls right in your own kitchen! Perfect for game day snacking, and it’s the final recipe for October is tailgating snacks month 2021.

I first made this recipe in 2015, when my blogger friend, Kayle at The Cooking Actress, posted about them. They looked so good that I made them for a Super Bowl party I hosted.

And, let me tell you, they are perfect football party food! And they were even better than I remembered!

Pizza Wraps

But, really what to call them? Originally, I called them Pizza Wraps. But, I think a wrap is a tortilla folded around cold fillings, and that’s not a good description of these. Or, maybe they’re Pizza Pockets. Or Pizza in egg roll wrappers. Or Pizza Wrappers. I don’t know. But, I think they are closest to a Totino’s Pizza Roll, so that’s what I’m going with here.

They are unique, super tasty, and, these are a fun way to eat pizza, or more actually, to eat a healthier version of those Totino’s Pizza Rolls. For more stuffed pizza filled goodness, check out my Pizza Skulls too.

Won Ton or Egg roll wrappers

This recipe replaces the flaky dough of those frozen rolls with egg roll wrappers.

Egg roll wrappers or won ton wrappers are typically used when frying. But they get crispy and golden, when baked up. And they hold fillings really well.

I usually find these wrappers in the natural foods area in the produce section of the grocery store, near the tofu and other meat substitutes.

If you can’t find egg roll wrappers, but you can find won ton wrappers, just use those. You won’t have to cut them, but you will have to seal all four sides with water.

Pro tips:

Make sure that you grab one egg roll wrapper at a time. They have a tendency to stick together, and since they are very thin you may not realize that you have two. I find that if I use my finger and rub on the very side of the egg roll wrapper, I can separate the two wrappers.

Keep the egg roll wrappers covered with a clean cotton towel while you work so they don’t dry out.

How to store pepperoni

I store the bag of pepperoni in the freezer. This makes sure it lasts a long time, and I always have pepperoni at the ready.

What is “string cheese”?

Some people from other countries may not have or be familiar with string cheese. Manufacturers package mozzarella into one-ounce packages so they are a single serving. And, most kids peel the cheese apart making it “string” cheese.

Here’s a link to {affiliate link} Amazon that hopefully will work in your country so you can see what I mean.

But basically, it’s just mozzarella sticks. If you can’t find those prepackaged sticks, just chop a block of mozzarella into about 1-inch cubes.

How to make Homemade Pizza Rolls

To make Pizza Rolls, simply fold an eggroll wrapper in half, and cut in in half so you have two squares. I like using egg roll wrappers that have a sealed side rather than won ton wrappers that you have to seal all four sides, and there’s more opportunity for stuff to seep out.

Place the pizza sauce, cheese, and your favorite toppings inside the wrapper.

I highly recommend using my homemade easy pizza sauce for these snacks. It’s inexpensive, quick to make (only takes about 5 minutes), and so good!

I’ve used pepperoni and red pepper, but you could go with crumbled cooked sausage, garlic, red onion, or fresh basil. If you want to use mushrooms, they would be great, you’ll just want to cook out the water before using them in the pizza wraps.

When I make them, I make half the batch vegetarian for me, and half the batch with pepperoni for the husband.

Place the filled wrapper on a parchment-lined baking sheet, and seal up into a packet by wetting the wrapper around the edges and pressing it together.

Bake until golden brown. Serve the rolls with extra pizza sauce on the side for dipping.

Can these Pizza Rolls be made ahead?

Yes, these are a great make ahead snack, just like those store-bought ones.

Fill and seal the wrappers, place them in a freezer safe container with parchment paper in between. When you’re ready, just pull them out of the freezer and bake them up.

They make a great after school or after work snack like this!

Ingredients
  

  • 4 sticks mozzarella string cheese
  • 8 egg roll wrappers
  • 8 tablespoons pizza sauce
  • 16 pepperoni slices
  • 8 tablesppons chopped jarred roasted red pepper

Instructions
 

  • Preheat oven to 400° F. Cover a baking sheet with parchment paper or a Silpat, or with non-stick cooking spray.
  • Cut each mozzarella into 1 inch pieces, until you have 16 total cheese pieces.
  • Place an egg roll wrapper on a cutting board, fold the wrapper in half, so you have a rectangle, and using a sharp knife or a pizza cutter, cut the rectangle in half so you have two folded squares.
  • Unfold each square and place the wrappers on the prepared baking sheet, about 1-2 inches apart. Repeat with the remaining wrappers.
  • Spoon about ½ tablespoon pizza sauce in the center of each unfolded half. Add a piece of pepperoni, sprinkle with chopped red pepper, and place a piece of the mozzarella on top.
  • Wet your fingers or use a pastry brush and water, and moisten around the inside edges of all 4 sides of the wrapper. Re-fold the top half of the wrapper over the assembled pizza and press the moistened sides together to seal. Repeat this process until you have 16 pizza wrappers.
  • Spray each pizza roll with non-stick cooking spray or lightly brush with olive oil.
  • Bake for 15-20 minutes, until golden brown around the edges.

Notes

This recipe is easily modified to make it vegetarian by leaving the pepperoni out. Vary the fillings as you like, add more red pepper, try adding chopped red onion, garlic, mushrooms, or your favorite pizza toppings.
