These Air Fryer Vegetable Egg Rolls are made in the air fryer for an easy and delicious fun appetizer that’s great for game day or any party. This recipe for veggie egg rolls comes out crispy on the outside with tender veggies inside.

I’m so excited about the first recipe for Tailgating Snacks Month 2019! It’s a super easy to make and super delicious recipe for Vegetarian Egg Rolls from the cookbook The Easy Air Fryer Cookbook: Healthy, Everyday Recipes for People with Diabetes.

We start the month off with a bang, and a review of The Easy Air Fryer Cookbook by Kathy Moore and Roxanne Wyss and a recipe from the book for Air Fryer Vegetable Egg Rolls.

I’m really impressed by the number of recipes I want to try from this small but mighty book.

By now I think you guys know I love my Air Fryer! I use it all the time. It’s like a really fast mini oven for me.

I just love the kitchen appliance so much that I collected all my recipes in one place. The Easy Air Fryer Cookbook celebrates one of the coolest kitchen inventions in recent memory: the air fryer!

The air fryer has revolutionized home-cooked fried foods.

Recipe Notes

These easy to make egg rolls are super tasty and very impressive.

They’re crunchy on the outside and filled with tender cooked veggies in a light Asian flavor sauce.

These Spicy Vegetable Egg Rolls would be really easy to change up too.

Want a little more protein? Toss in some chopped tofu. Or try some shredded chicken.

If you don’t follow a diabetes diet you could add in some toasted sesame oil or sesame seeds. Add a bit of sweet and sour sauce to the mix for a little kick.

I want to try added some cooked glass noodles to them as well.Don’t like spicy? Feel free to cut the red pepper flakes in half, or leave them out entirely.

The filling made 6 egg rolls for me, but I figure that’s just more yumminess! And I cooked my egg rolls in two batches so they didn’t sit too closely together and the air could still circulate.

How to roll an egg roll

The egg roll wrappers will dry out if left uncovered, so be sure to cover them with a damp clean cloth as

you work with them.And a really nice thing about making these egg rolls in the air fryer, is if you do happen to rip the wrapper, the filling won’t all spill out when the egg roll cooks. Since it’s sitting in the air fryer, the filling is still contained.

How to roll an Egg Roll: Place about ¼ cup filling on each egg roll wrapper. Brush some of the egg white mixture on the edges of the egg roll wrapper.

These easy to make and healthy air fryer egg rolls are super tasty and very impressive. They’re crunchy on the outside and filled with tender cooked veggies in a light Asian flavor sauce.

Equipment

  • Air Fryer

Ingredients
  

  • 1 cup cabbage slaw mix
  • 2 green onions white and green portion, chopped
  • ¼ cup finely chopped red bell pepper
  • 1 teaspoon reduced sodium soy sauce
  • ½ teaspoon red pepper flakes
  • 4 egg roll wrappers each about 6 ½ – inches square
  • 1 large egg white
  • 1 teaspoon water
  • 1 teaspoon cornstarch

Instructions
 

  • Preheat the air fryer, with the air fryer basket in place, to 400° F.
  • In a medium bowl, combine the slaw mix, green onions, red bell pepper, soy sauce, and red pepper flakes for the filling.
  • In a small bowl, whisk together the egg white, water, and cornstarch.
  • Place about ¼ cup filling on each egg roll wrapper. Brush some of the egg white mixture on the edges of the egg roll wrapper. Roll up the egg roll, folding in the sides so that the filling is contained. Brush the egg white mixture on the outside of each egg roll.
  • Place the egg rolls in the air fryer basket in a single layer. Air Fry for 8-10 minutes, flipping halfway through, or until brown and crispy. Serve warm with dipping sauce if desired.

    I love making cinnamon rolls in my air fryer..they are crispy and tasty. I tried these egg rolls in the air fryer as well and they were perfect.

    These look yummy, but shouldn’t you saute the veggie filling first? That way it will be cooked through.

    Korey, you don’t need to go to that trouble. The filling cooks as the egg rolls are in the air fryer. Saves time!

    We love our air fryer. It’s funny because we got it for Christmas last year from my parents and my husband looked at me and said: “another appliance that takes up too much room”. Well, he changed his tune quickly. He uses it multiple times a week. Our favorite is frozen french fries. They cook them up so fast and delicious… without frying them.
