Smoky garlicky almonds with a nice salty touch. Simple food, really. Delicious food, definitely. These are naturally vegan and gluten free. Also, these fit in a keto, Paleo, or low carb diet.

October is Tailgating Snacks Month 2018

Healthy game day snack

Welcome to Tailgating Snacks Month 2018! the 5th annual!

I love having healthy options on the game day spread. And, people love almonds, so they will naturally gravitate towards this healthy nibble.

Almonds are packed with vitamins, minerals (including calcium which keeps bones & teeth strong), fiber, and just a handful of almonds contain one-eighth of our daily protein needs. They help lower cholesterol, something I’m always on the lookout for! And, almonds can help regulate blood pressure because they are high in magnesium. Almonds can also help control glucose levels and reduce the risk of cardiovascular disease for people with type 2 diabetes.

All those health benefits, plus a super tasty snack, sign me up!

Easy to make

And, this recipe is super easy to whip up. You could even make it right before you head out the door to a tailgating party! Just imagine showing up with warm, smoky almonds – all your friends will love you!

Just whip an egg white until frothy, toss in some spices and the almonds, and bake until crispy and crunchy and delicious!

Egg whites

The egg whites help keep all the flavors attached to the almonds so every bite is filled with smoky flavor.

What are Unblanched almonds?

Back in the day, raw almonds used to be called unblanched almonds.

I’m still used to calling them unblanched, because that’s how I learned about them.

But, if you ever see the term unblanched almonds, just know it means, almonds that have had no processing done to them, other than to remove their shells. The thin brown skin around the almonds is even kept on.

Almond skin

In fact, that brown skin means they have more nutrition than almonds where the skin is removed.

This is because the skin contains extra antioxidants and because the raw almonds have not been heated, and raw food tends to retain more of its nutrition. Again, more of that healthy stuff!

We keep a big container of almonds from Costco in our pantry and I am constantly using them as a healthy and satisfying snack. I love how you have jazzed up ordinary almonds and turned them into a tasty celebration!
