Refreshing summer dessert

Since summer is coming quickly (maybe more quickly than I’d like!), I thought a nice refreshing Coconut Lemon Slushie dessert sounded nice and refreshing. Light and healthy. Creamy and delicious!

This {affiliate link} Slush and Shake Maker is really easy to use. Simply freeze the inner core for 8 or more hours, and you’re ready to make slushies! Follow along with the easy instructions that come with the maker. And, this slush maker is BPA free!

This would be really fun to have the kids making slushies and milkshakes during the hot summer months.

What if I don’t have this slushie maker?

If you don’t have one of these slushie makers, this can be made in a freezer safe container placed in the freezer, stirring occasionally until frozen. Or, try a compact ice cream machine, an ice cream bowl, or place the mixture in a regular ice cream maker and mix until desired consistency.

Coconut Lemon Slushie is a refreshing creamy frozen coconut lemonade treat that’ll help cool you off in the summer, and it’s nice and healthy too!

Ingredients
  

  • ½ cup powdered sugar
  • pinch salt
  • ¼ cup fresh lemon juice
  • 13.5 ounce can full fat coconut milk

Instructions
 

  • Place powdered sugar and salt in a small bowl, and mix in the lemon juice. Continue stirring until powdered sugar has dissolved. Before opening the can of coconut milk, shake the can of coconut milk up really well so that there is no separation inside. Mix shaken coconut milk into lemon mixture.
  • Pour mixture into the frozen inner core of the Slush and Shake Maker. Wait a minute of two, and then scrape the walls of the cup with the included plastic spoon to remove the iced mixture. Continue scraping and stirring until your slushy is the desired consistency.
  • This can also be made in a freezer safe container placed in the freezer, stirring occasionally until frozen. Or, try a compact ice cream machine, an ice cream bowl, or place the mixture in a regular ice cream maker and mix until desired consistency.
