These Vegan Chocolate Coconut Candy Cookies are easy to make sweet little candy treats that are filled with chocolate and coconut flavor!

My mom’s recipe

I really love these No Bake Chocolate Candy Cookies. They’re my mom’s recipe from when I was a kid.

When I told her I was going to be making them to share with everyone, she told me how she makes them with coconut now too.

Well, that got me thinking – what if I upped the coconut flavor and made them vegan?

Try all my Candy Cookie flavors

I’ve had lots of fun experimenting with the flavors of these No Bake Candy Cookies. Here are my creations and twists from the original Chocolate Candy Cookie that my mom made when I was a kid, Chocolate Covered Strawberry Candy Cookies, Peppermint Mocha Candy Cookies, and Pumpkin Spice Candy Bites.

Coconut and vegan!

Let me just say that I love these! With a nice coconut flavor, these are a little more crumbly than their non-vegan counterparts. But the flavor is great! And they are just as easy as the originals.

Not those peanut butter filled no bake cookies I see everywhere either – these Vegan Chocolate Coconut Candy Cookies are more candy than they are cookie. Sweet and lovely. And reminiscent of pralines.

Recipe Notes

I like unrefined coconut oil for this recipe. The unrefined coconut oil will have a bigger coconut flavor, and the candy cookies benefit from that. If you have refined, that will be fine too, just a little less coconut flavor.

For the coconut, use either sweetened or unsweetened coconut. I know that unsweetened can be difficult to find. Just know that the candy cookies will be a little sweeter if you use sweetened coconut.

Ingredients
  

  • ½ cup melted coconut oil
  • 2 cups granulated sugar
  • ½ cup full fat canned coconut milk
  • ½ cup unsweetened cocoa
  • 3 cups instant oatmeal uncooked
  • ½ cup shredded coconut
  • 1 teaspoon pure vanilla extract

Instructions
 

  • In a heavy bottomed saucepan, add the melted coconut oil, sugar, milk, and cocoa. Bring the mixture to a boil, and let boil 2 minutes. Remove from heat. Add oatmeal, shredded coconut, and vanilla. Stir to combine. Drop by large spoonfuls onto aluminum foil or use a cookie dough scoop to form mounds. Sprinkle with additional shredded coconut as garnish, if desired. Allow candy cookies to cool.
