This Air Fryer Ratatouille Gnocchi is tasty, healthy, and quick and easy to make. It’s a perfect vegan or vegetarian dinner dish in under 30 minutes, or serve it as a side dish for meat eaters. In addition to air fryer instructions, I’ve also given you oven instructions for a sheet pan dinner.
How about a little fusion fare? Ratatouille Gnocchi is a combination of French food with Italian food. Ratatouille, a classic comfort food dish from France, and those little pillows of potato goodness, gnocchi, from Italy.
Now, this dish is great year-round, but it’s going to be in regular rotation in summer when zucchini and tomatoes are in season. It’s also great when served at room temperature for those days where you don’t want anything hot to eat.

Air Fryer Recipes
This recipe comes from Air Fryer Recipes: 150+ Yummy Air Fryer Recipes, Including Dinner, Sides, Breakfast, Snacks, Lunch & Desserts by Cathy Yoder. It’s a great basic recipe cookbook for the air fryer with lots of tips for beginners on how to get the most out of the AF.
And it’s chock full of yummy air fryer recipes. These are simple recipes with simple ingredients that the whole family will enjoy. Some of the stand out quick tips that I love …
- “Never preheat the air fryer with parchment paper inside. It’ll blow up into the heating element and start to burn. When you do use parchment paper, be sure the food holds the parchment paper down so it doesn’t fly up into the burner.
- Open the air fryer to check on the doneness of the food. The air fryer is small and compact, which makes checking on the progress of your food a lot easier. Open your air fryer, check on your food, and make adjustments as needed. Most air fryers will pause when you open them. If not, look for a pause button.
- Never ever set your air fryer on the stove. If your stove accidentally gets turned and your air fryer is also on your stove, not only is your air fryer a goner, but so is your stove!
- Use water or bread to keep the air fryer from smoking. If you’re cooking fatty foods such as bacon or sausage in the air fryer, put either a ¼ cup of water or a slice of bread in the base of the air fryer to absorb grease.
- Make a foil sling for foods that are hard to take out of the air fryer basket. Just make sure you leave room along the sides for air flow! Simply make a large rectangle with handles that you set delicate foods on. That way you can just lift the foil (and the food) out of the air fryer with ease.
- Clean your air fryer after each meal. Wipe down the top and bottom of the air fryer and clean the air fryer basket. NEVER use abrasives to clean your air fryer. That will wear your air fryer basket down quickly.
- Use the air fryer to dry the air fryer basket. Wash the basket, and then pop the damp air fryer basket into the air fryer and run it for a few minutes to dry the basket. Let the air fryer cool completely before putting it away.”
How to make
This is a super simple yet so flavorful dish, and the veggies are roasted to perfection in the air fryer.
Spice Blends
Want to make your own Herbes de Provence: Mix the following ingredients together. You can blend them a bit in a spice/coffee grinder if desired. Mixture will make more than you need for the gnocchi recipe.
- 1 tablespoon dried rosemary
- 1 tablespoon dried savory
- 1 tablespoon dried thyme
- 1 tablespoon dried basil
- 1 tablespoon dried marjoram
- 1 tablespoon dried lavender flowers
- 1 tablespoon dried parsley
- ½ tablespoon dried oregano
- ½ tablespoon dried tarragon
Or use an Italian seasoning blend. Again, mix everything together, and this will make more than you need for the gnocchi recipe.
- 1 tablespoon dried basil
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 tablespoon dried marjoram
- 1 tablespoon dried parsley
- 2 tablespoons dried oregano
- 1 teaspoon garlic powder
Get mixing
In a large bowl, mix together the vegetables with garlic, olive oil, balsamic vinegar, salt, pepper, and herb mixture. And really, you can go with any combination of veggies that you like. Don’t care for eggplant? Leave it out. Garden has a ton of zucchini? Add lots of them.
You’ll want to use fresh gnocchi in this. I love those fresh skillet gnocchi from Rana. You can find them in the dairy aisle of the grocery store most of the time. Of course, you can you’re your own homemade ones.
Typically, gnocchi are gluten free, making this dish plant-based, vegan, dairy free, vegetarian, and gluten free. But be sure to check the ingredient label to make sure.
In a separate bowl, mix the gnocchi with ½ tablespoon of oil, coating all the gnocchi.
Air fryer method
Place the tossed vegetables in the preheated air fryer basket, and add the gnocchi on top. Cook at 400° F /200˚ C for 15 minutes or until vegetables reach desired crispiness and gnocchi is heated through, shaking and stirring halfway through cooking.
Oven method
Roasted in the oven on one sheet pan, this dish is super simple to make even if you don’t have an air fryer.
Place coasted veggies on prepared sheet pan in a single layer. Add gnocchi on top.
Roast, about 25-30 minutes, until veggies and gnocchi begin to brown on edges, toss halfway with a spatula.
Serve, garnished with fresh herbs, grated Parmesan cheese, and additional fresh pepper if desired.
Store leftovers in an airtight container in the fridge for 3 to 5 days. Reheat in the air fryer, microwave, or oven.
Changes to the recipe
This is a very flexible recipe, so you can totally mix it up.
Vegetables: Add in any leftover veggies or mix up the veggies with sweet potatoes, edamame, cherry tomatoes or big beefsteak tomatoes, chopped, shallots, yellow summer squash, cauliflower, broccoli, mushrooms, Brussels sprouts, or diced butternut squash.
If the fresh tomatoes in your grocery store don’t look so great, use canned diced tomatoes.
Add in some protein like tofu, lentils, cannellini white beans, chicken, plant-based sausage, or salmon.
Finish it off with fresh spinach leaves or fresh herbs of any kind like basil or oregano, parsley, or basil. Add some red pepper flakes for heat.
Garnish with grated Parmesan cheese.
Serving suggestions
Ratatouille can be the main dish with a side of crusty bread or a salad. Serve it as the side to roasted salmon or steak.
It can also be served over a bed of leafy greens like spinach or arugula, rice or cauliflower rice, quinoa, polenta, pasta, mashed potatoes.
Add some sauce to the mixture after cooking like pesto, garlic cream sauce, marinara, or your favorite jarred or homemade sauce.

Air Fryer Ratatouille Gnocchi
Ingredients
- 4 cups mixed vegetables: zucchini eggplants, tomatoes, red bell pepper, red onion, all cut into bite sized pieces
- 4 cloves garlic minced or left whole
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- 2 teaspoons Herbes de Provence or Italian Seasoning
- 12 to 16 ounces fresh gnocchi
- ½ tablespoon olive oil
Instructions
- In a large bowl, mix together the vegetables with garlic, olive oil, balsamic vinegar, salt, pepper, and herb mixture.4 cups mixed vegetables: zucchini eggplants, tomatoes, red bell pepper, red onion,, 4 cloves garlic, 2 tablespoons olive oil, 2 tablespoons balsamic vinegar, salt and pepper, 2 teaspoons Herbes de Provence or Italian Seasoning

Air Fryer Instructions
- Preheat the air fryer to 400˚ F/200˚ C.
- Place the vegetables in the preheated air fryer basket, and add the gnocchi on top. Cook at 400˚ F/200˚ C for 15 minutes or until vegetables reach desired crispiness and gnocchi is heated through, shaking and stirring halfway through cooking.
- Serve, garnished with fresh herbs, grated Parmesan cheese, and additional fresh pepper if desired.
Oven method
- This can also be made in the oven on a sheet pan. Preheat oven to 450° F and line sheet pan with parchment paper.
- In a large bowl, mix together the vegetables with garlic, olive oil, balsamic vinegar, salt, pepper, and herb mixture.
- In a separate bowl, mix the gnocchi with ½ tablespoon of oil, coating all the gnocchi.
- Place veggies on prepared sheet pan in a single layer, distributing various items evenly. Add gnocchi on top.
- Roast, about 25-30 minutes, until veggies and gnocchi begin to brown on edges, toss halfway with a spatula.
- Serve, garnished with fresh herbs, grated Parmesan cheese, and additional fresh pepper if desired.
