Crock Pot Corn Dip

Hot Crock Pot Corn Dip is a creamy delicious dip with cream cheese, sweet corn, and just the right kick of spices that’s super easy to make.

It’s one of those perfect crowd-pleasing appetizers that’s super delicious (that’s why they call it Crack Corn Dip) and yet so easy to whip up in the crock pot. Be sure to check out my Air Fryer Mozzarella Bites for another winning appetizer!

I first made and shared this recipe in 2015 as part of the second annual Tailgating Snacks Month. But it’s time for an update. So, I’ve updated the pictures, the information, as well as the recipe itself all for a yummier user experience.

Party on Crock Pot

I love the crock pot for parties.

You can throw all the goodies into the crock pot before your guests get there.

The slow cooker does all the work for you. Maybe just a stir or two, and you’re all set for this amazing party recipe. And this dip is great at football parties, holiday gatherings, and family dinners!

Crock pot snack recipes

Sure, the slow cooker is great for meals, but it’s also the perfect tool for entertaining with ease.

Some of my favorite game day grub and crock pot dips recipes are Slow Cooker Chipotle Bean Dip, a smoky spicy bean dip that’s got all the football moves, Crock pot crab dip, a dip that’s always a hit with the crowd, and Crock pot herb almonds, for a healthy and delicious snack.

I’m a big fan of dips, and could really make a meal out of them. So, if you’re looking for more dip recipes to round out your party spread, take a look at some of my many dips and spreads recipes.

Tailgating Snacks Month

I’ve decided to include this updated recipe in 2022’s tailgating snacks month recipes. It’s so good that it deserves to be celebrated multiple times!

We’re nearing the end of this tasty month, so be sure to keep an eye out for the round up of snacks at the end of the month.

Recipe creation

My crack corn dip crock pot recipe was inspired by two recipes so that I could make the Best crock pot corn dip recipe.

Chrisy at Homemade Hooplah posted a Creamed Corn recipe back in 2014, and I can say that I’ve made this recipe many times now, for Thanksgiving dinner, for special dinners, and for just weeknight stuff, but I’ve always served as a side dish in my house.

So, when I decided I wanted to make a Crock Pot Corn Dip I knew I wanted to start there.

Then, I used An Affair from the Heart’s {Award Winning} “Crack Dip” as my second source of inspiration.

And what I got was a creamy delicious dip with sweet corn and just the right kick of spices that I couldn’t stop eating. And, it’s super easy to make.

Recipe update

I’ve taken the sugar out of the recipe.

I originally called for 1 tablespoon granulated sugar. I just don’t think it needs that anymore.

But, if you’ve made the dip before with the sugar, feel free to toss it in.

Pro tips on how to make this delicious dip

This dip really is as simple as toss the ingredients in and give it a stir. But I have some hints and tips for you to get the best out of this recipe. Be sure to hop down to the recipe card for full recipe.

For the corn. Frozen corn is picked at the peak of freshness, so it’s always sweet and filled with as much nutrients as possible.

Use petite sweet corn for the sweetest flavor. Feel free to use white corn or yellow corn for this. Or a combination of both.

And, you don’t even have to worry about defrosting the frozen corn before adding it to the crock pot; just toss it in and let the slow cooker do the work for you.

Can I use fresh corn?

Yes, absolutely, feel free to use fresh summer corn. It’s such a great value in the summer. Or maybe you grow your own.
 
The amount of corn kernels will vary per ear, but you can generally figure that an ear of corn will get anywhere from ¾ cup to 1 cup of kernels. So you’ll need 5 to 8 ears.
 
This Crack corn dip crock pot recipe is great for summer parties or hot eating poolside when fresh corn is at its peak!

Cream cheese

I recommend going with Philadelphia cream cheese. No, they aren’t sponsoring this post.

I just think the brand is always good and consistent with great flavor and texture. And since there are just a handful of ingredients in this Crock pot corn dip with cream cheese, go with the good ones!

What milk should I use?

I get this question a lot. What milk should I use in this recipe?
 
For me, most of my cooking is done with whole milk or 1% milk. Both work really well in this dip.
 
Whole milk will make a richer creamier recipe. While 1% will save some calories and fat.
 
I haven’t tried plant-based milk for this. And since this is a cream cheese-based dip, I’m not sure I would bother testing that. But if you try it let me know how it goes.

jalapenos

Chop the jalapeno nice and fine. You can leave the seeds and membranes of the jalapeno in the dip if you want it to be spicier. Take them out if you want a mild dip. I typically take them out when I make the dip.

Also, if you have sensitive skin, you may want to wear gloves when handing the pepper. And please be sure not to touch your nose or eyes after handling the pepper.

How to make

Add all ingredients to the bowl of a 2.5-quart to 4-quart slow cooker.

Cover the crock pot and cook on high for 1 hour.

Stir the hot corn dip, and continue cooking, covered, on high for 1 additional hour.

Spoon Corn Dip into a serving bowl, garnish with scallions if desired, and serve with your favorite tortilla chips for a great snack that is great to nosh on while watching the game.

Once this chunky dip is finished cooking, I recommend turning the crock pot off and transferring the corn to another dish for serving. Not only will the serving bowl be prettier, keeping it in the crock pot may cause it to burn around the edges.

Serve it with tortilla chips, veggie sticks, or those scoopable corn chips (I highly recommend these as they are sturdy and stand up to the thick chunky dip).

Can I make this dip in advance?

Yes, this is a great recipe to prep before the party and have it ready when your guests get there.

It’s nice that it cooks for two hours in the crock pot so that gives you lots of time before your guests arrive.

If you want to prep it up to two days in advance, simply pop all the ingredients in the bowl of the crock pot, cover it, and place it in the fridge until you’re ready to cook it. Then, all you have to do is place the bowl in the metal crock pot unit, and turn it.

If you have leftovers, make sure to cover them tightly and store them in the fridge.

To reheat the corn dip, you can either warm it up in your slow cooker or pop it in the microwave. When reheating, be sure to stir well before serving.

It’s great cold from the fridge too!

How long is corn dip good for?

Leftover corn dip can be stored in an airtight container or in the fridge for up to five days.

Can you freeze creamed corn?

Because this recipe is a cream cheese-based recipe, I don’t recommend freezing it.

The consistency of cream cheese can change after freezing and thawing, and may ruin the creaminess.

How long can you leave it out at a party?

Like most foods, especially foods with milk, only leave it out for a couple of hours. After that, pop it back in the fridge. If your guests want more, it can be enjoyed cold, or pop some in the microwave to reheat.

Can I cook this on low?

I’ve been asked about cooking this on low, and to be honest, I don’t recommend that.

I’ve only cooked it on high, and haven’t tried cooking it on low.

Most recipes are about 1 & ½ to 2 times longer on low. But, due to the cream cheese in this recipe, it may burn if cooked for a total of 4 hours.

If you try cooking it on low, I’d love to hear how it goes, but I do recommend the higher temp here.

Ingredients
  

  • 4 cups frozen corn
  • 1 jalapeno finely chopped, seeds and membranes removed if desired
  • ½ cup milk
  • 8 ounces cream cheese
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse ground black pepper
  • ½ cup chopped green onions plus additional for garnish

Instructions
 

  • Add all ingredients to the bowl of a 2.5-quart to 4-quart slow cooker. No need to mix them, just drop them in. Cover and cook on high for 1 hour.
  • Stir corn dip, and continue cooking, covered, on high for 1 additional hour.
  • Spoon Corn Dip into a serving bowl, garnish with green onions if desired, and serve with your favorite tortilla chips.

    If you like spicy heat, you can leave the membrane and seeds in. If you like a mild heat, take them out. Thank you for the question. I’ll make sure to add that information in. I typically take the seeds and membranes out as I don’t care for too much heat.

    I never do reviews, but I made this for the first time for a staff “Dipsgiving” and won a prize! Delicious!

    Note – subbed green chiles for the jalapenos for a milder spice. Sprinkled Monterey cheese on top.
