Tacos with Avocado

What can I top these with?

Of course, use whatever toppings you love on your taco. Lettuce, cabbage, cilantro, chopped tomato, additional salsa, sour cream, cheese, toasted pepitas, your favorites!

Tacos are a staple around my house. I make them all the time. I think tacos are great for dinner because you can always switch up what’s inside the taco. They’re a great way to use up leftover veggies, cheese, grains, or meats.

Recipe notes

I like these Easy Lentil Tacos with Smashed Avocado because you use your favorite salsa, so they already have the flavors you love.

Jarred tomato salsa, homemade tomato salsa, or switch it up and try some roasted tomatillo salsa in your lentil tacos.

What kind of lentils should I use?

I love the ease of using canned lentils in these tacos. My regular grocery store doesn’t carry canned lentils, so when I’m at a store that does carry them, I pick up a couple of cans to keep the cupboard well stocked.

If I’m all out of canned lentils, it doesn’t take too long to cook some up on the stove, just follow the package directions. Use brown, green, or black lentils in this recipe.

I’ve also used leftover lentil soup (drain out all the broth from the soup, and use the lentils).

Meatless crumbles

The meatless crumbles I buy are in the frozen section of my stores. I find them in bags. I’ve also seen meatless crumbles in the produce section of some stores (in the meat substitute area). You can also make your own meatless crumbles by smashing up meatless meatballs or meatless veggie burger patties. If you prefer to go meaty, cooked ground turkey or beef can easily be used in place of the meatless crumbles.

Ingredients
  

  • 1 15 ounce can cooked lentils (about 2 cups)
  • ½ cup meatless crumbles
  • 2/3 cup salsa
  • ½ tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper

Instructions
 

  • Place lentils, crumbles, salsa, chili powder, oregano, and cayenne pepper in a saucepan, and heat over medium-high heat, about 5 minutes or until hot.
  • Serve in tortillas, with smashed avocado, shredded lettuce, and toppings of your choice.
