Summer Salad: My summer salad is a celebration of fresh produce! With my favorite summer fruit as the star of the show, peaches, you know it’s going to be good. Green beans, creamy avocado, and grilled corn round out this salad.
White Bean Arugula Salad with Frico is a great salad when you’re having guests. That frico, or crispy cheese, is the star of the salad. The creamy white beans are offset nicely by sharp shallots and peppery arugula.
Peas with Herbs is a great way to show off some fresh in the pod peas. These Farmer’s Markets specialty are one of my favorites, and the herbs just give this a great flavor.
Cucumber and onion salad This is the cukes & onions recipe I grew up with, and it was on every holiday table for my family. I still serve it today, and I just love it. It’s classic, easy to make, budget friendly, and so delicious!
Cranberry pecan broccoli salad a nice light creamy dressing over fresh broccoli with the crunch of pecans and the tang of cranberries. This reader favorite is sure to be a hit on your table as well!
Instant Pot Potato salad This is my Father in-law’s potato salad recipe that he makes for all the family gatherings. It wouldn’t be a holiday without this potato salad. I’ve converted it into a pressure cooker recipe so that the eggs and potatoes cook together, making it super easy on the cook!
Leafy greens based:
Anti-inflammatory kale salad healthy and delicious, this kale slad takes the leafy greens to a whole new level. Add in all those anti-inflammatory goodies like blueberries, cherries, and almonds, and this is a healthy meal you’ll crave!
Farmer’s market salad is filled with earthy roasted beets (or vegetable candy as I like to call them), walnuts, lentils, and avocado. All served over fresh spinach. This is so good!
Pasta salads:
Avocado Ranch Pasta salad the classic pasta salad, updated with ranch and avocado. This might just be pasta salad perfection right here!
Southwestern BBQ pasta salad This pasta salad is perfect for all things BBQ and grilling. Outdoor party? Bring this pasta salad. Grilling up tonight’s burgers or chicken? Serve this bad boy.
Udon noodle salad this noodle salad is a fun change from the creamy mayo based salads. I like to bring this to picnics and potlucks. It can sit out for longer and there’s no worry about the mayonnaise going bad. And everyone loves this at the picnic!
Balsamic dressing pasta salad is another great pasta salad with no creamy component. This one’s vegan, so it can be served to lots of guests. You could even use gluten-free pasta and it would cover just about every diet there.
Soba noodle salad with grilled veggies and tofu is a great hearty pasta salad with nice Asian flavors. It’s easy to make, quick, and healthy. And if you’re looking for something different to make, this is the recipe.
Fruit salads
Peach strawberry fruit salad fruit salads are always popular. But this one takes the fruit salad game to an even higher level. It has a beautiful lime basil dressing that makes this a truly unique fruit salad.
Pineapple blueberry salad is a fun way to serve a fruit salad. And this healthy treat will be loved by everyone at the party!
Seafood based salads:
Salmon Caesar Salad this is a great way to use leftover salmon so you don’t have to reheat it (cooking it twice). Creamy Caesar dressing over fresh greens, goodies, and healthy salmon. This salad is perfect for dinner!
Corn Cakes with tuna tomato & avocado salad a delicious summer dinner that features summer tomatoes and summer corn! A nice hit of protein from the tuna, and that creamy avocado!
Niçoise salad this is my take on the classic French salad. I used to work at a French cafe, and this was always one of my favorites. I’ve recreated it here using canned Island Trollers Albacore tuna.
Cranberry pecan tuna salad a delicious and light tuna salad with the tang of cranberry, the sweetness of grapes, and the crunch of pecans. Everything works so well together in this salad!

Cranberry Pecan Chicken Salad the classic salad that’s also great in a pita, served with crackers, or in a wrap. It’s welcomed at all the family gatherings!
Asian chickpea salad healthy and full of flavor. This is one of my favorites to take to a family potluck. It’s also great to take to work or school for lunch. Pop it in a whole wheat pita for a fun sandwich.
Tofu with broccoli and blue cheese salad this fancy salad is packed with flavor. And if you’re a blue cheese lover, it’s a must try!
Slow Cooker Lentil Taco Salad is a great meal that you make the lentils in the crock pot. Then add the lentils to taco salads or tacos for a great vegetarian meal!
Grain salads:
Mexican Corn Salad one of the most popular salads here on Life Currents! It’s the perfect summer salad! A must try. I also like serving this salad at taco bars because it can be eaten as a salsa with chips for an appetizer or stuffed into tacos for a vegan taco filling.
The Jennifer Aniston Salad is a grain based salad, I love it with quinoa. Then it’s filled with veggies like cucumber and red onion. Toss in some protein rich chickpeas and lots of herbs, and you have a delicious filling lunch!
Wild rice salad is as beautiful as it is tasty! This unusual salad is always the first to disappear at parties.
Street corn (esquites) this easy to make Mexican corn is so good. Besides serving it as a salad it’s great with chips or in taco bowls.
